AIDS or Hep C transmitted by food

Dear Ask The Doctor: I am concerned about eating out at restraunts. If a food worker who has AIDs or Hepatitis C got a cut and had a drop or two of blood that got in a salad (or food that was not cooked) and you end up eating it would you be likely to get infected?

Dear Glenn:

I understand how concerned you are about getting infected with Hep C or HIV via blood drops in the food. Let me reassure you that this would be very unlikely to happen, it might be almost impossible for these viruses to be transmitted in this way since blood to blood contact is needed and also because these viruses are very fragile once they are in the environment.
